Sounds like it could be a thermostat problem. I had similar in my saturn. While my heater was on I would not overheat, but when I didn't have the heat on , I sure would!

i have a 97 deville i recently replaced cylnder heads,gaskets,timing chains,water pump,thermostat,hoses,etc..... but is still overheating
