You can do it in one day and nineteen hours without stopping. http://maps.google.com/maps?f=q&hl=en&geocode=&time=&date=&ttype=&q=sf+to+nyc&sll=37.0625,-95.677068&sspn=48.641855,79.716797&ie=UTF8&ll=39.774769,-98.173828&spn=47.062147,79.716797&z=4&om=1 If you stop for 30 minutes every 3 hours, that only adds seven more hours to the trip. If you sleep for 10 hours a night, then you get 14 hours of driving a day minus 2.33 hours rest. So: 43 hours total / (14 - (14 / 3 / 2)) = 3.68 days.

The way you guys seem to drive, most probably ;-) I'm not sure what exactly ''coast to coast'' includes, but presuming you go from the west coast to the east coast, I think you could (especially if you took turns driving). I gmapped going to New Jersey from San Francisco, and that journey took 42 hours to drive without stops. With stops, and a few people to take over driving while the others sleep... I think it'd be fine.
