I always thought this meant cousin status. Generations, OK, I can go with that. We don't use these expressions in our family and area of the country so I'm not familar with them.

The term "removed" in genealogy indicates a generational difference. For example, your first cousin's child is your first cousin once removed. Your cousin's grandchild would be your first cousin twice removed. It is really very simple when you think about it.
