Does anyone make a home or commercial air conditioner that can be mounted in the ceiling and vented into the attic, through the roof, or under the eaves?

That's certainly do-able but it's not a "off the shelf" system that any DIYer is going to get done. It's going to involve some ventilation fabrication and design to maintain necessary velocities etc. The economy is not so good try calling a licensed hvacr guy in your area for an estimate, you may be surprised.
