You need something to that effect. Look up a recipe online. A lot of the newer ones call for sour cream mixed with other things as a substitute. Your ziti will be very dry if you just omit the ricotta entirely.

I pretty much only cook Italian food, but I don't like the texture of Ricotta. I like to substitute mozarella and my recipes haven't suffered. I knew someone who used cottage cheese, too, but the results were less than pleasing. The taste wasn't too bad, but the look of it was unappetizing.

Absolutely not. Try mozzerella, or fetta, or shredded cheddar for that matter. Whatever sounds good. I don't abide by any "food laws".

Where are you putting the ricotta? You could substitute it with cottage cheese if it goes into the meatballs, or Parmesan with a little added moisture like from milk. If it's just in the dish itself, almost any cheese would do, the ones mentioned or others like mozzarella.
