I don't know how to fix couscous. I just like saying it. Cous Cous.........Love that word.

I usually toss in some tomatoes (prefer fresh, but I'll take canned in a pinch), salt and sherry vinegar (sparingly please) and a few herbs (thyme and oregano or mint depending on mood). When it's done, I usually give it a good shot of olive oil before tossing. I also like steamed vegetables (cauliflower, broccoli, green beans, etc) tossed with it as well. I often sprinkle a little sumac and/or red pepper on top.

I like to prepare it with a little olive oil first, and then I toss in some pignoli nuts (pine nuts) and added very small chopped up bits of quince paste. Its delicious!
