I cooked the day before...I've never done it before, but for the turkey, if you cover it with lettuce leaves, it stays surprisingly moist!

I put mine in at exactly 11:00am. It was done at 4:30pm, and we ate around 5:00pm. I wouldn't have done one if it required me to get up as early as you did :)
