Yes I do. Weird enough is that I hate cooking programs and never look at cook books. As creative as I am with my Q&A here, let me assure you I am just that creative in the kitchen. I have a memory like a bear when it comes to food and I never forget what worked and what didn't. Many times I can have the oven, four ranges, the microwave and a toaster oven going when I am preparing a meal and sadly I am a kitchen tyrant; I demand absolute space when I am creating meals; my faux pas. All my dishes come straight out of my mind and yes they evolve into more complicated dishes and tastier ones all the time.

Yes, I own about 25 cookbooks and hardly use them anymore. I've gotten pretty good at cooking over the years. I've gone as far as taking classic meat dishes and creating vegetarian versions of them. Our friends love them (yes, I use my wife and friends as Guinea Pigs, but they don't seem to mind). The real goal behind a complicated dish, is to keep it as simple as possible for prep and cooking, but to have a complex set of flavours rolling over the pallet. New flavour or texture every second or so rolling and melding as you are eating it.

This may not be the answer you were looking for. But I just had to pitch it in. A few months back, I was over at my parents house when they all went to a birthday party somewhere else. As I walked across the kitchen floor in the dark to get a new light bulb to replace the bad one there in the kitchen. I bumped into a dish on the edge of the counter that was given to Mom & Dad from us kids for their 50th Anniversary. Believe me it was very complicated trying to put all the pieces back together again. Like I stated before this may not be the type of dish you where looking for. But to me it sure was the most complicated one to fix.

Thanksgiving. This involves me getting up at 3am to turn the turkey over in my giant brining pot, then getting up again at 6am to drain the thing. But you know what? It makes a damn fine turkey!

Many many, some classic and some ethnic and some bordering on molecular gastronomy. I enjoy playing in the kitchen. I love reading and studying about foods from all over the world. I love the scientific part of cooking and baking. All of it just thrills me:-)

Yes. I make Indonesian food, which sometimes involves marinating the day before, no less than a couple of hours. The results are fantastic, though.
