I cannot speak for China from personal experience, but in Japan and Korea chopsticks are very much the norm, and if a westerner asks for a fork they are delighted to bring it - with a condescending smirk. I read that eleven million pairs of disposable chopsticks are used every day in Tokyo alone. The Koreans go more for metal ones, which I found harder to use because slipperier. I imagine China is the same (Hong Kong is, from a short visit) quite a while back

Yes, there is no reason for them to change unless they are eating some other kind of food but Chinese people really do prefer eating Chinese food and it's easier to use chopsticks and spoons. Everything is already cut up for you or you can hold it with chopsticks. Going to a fork is like a backwards step for them. Been there, done that. The Chinese immigrants I know here in the US still use them in America for eating Chinese food.
