I've never tried this, but instead of using water, try using liquids that "sparkle." For example, sparkling cider. It might not taste good, but it puts that "sparkling" into sparkling jello. Or, you could just use foods that sparkle instead of others. You could always look it up on Google.com (or any other search engines) if this doesn't seem to work.

This recipe is for molded jello.. but this works if you just want to make a bowl of jello or whatever. Different fruit can be substituted, or if you don't want fruit, after you put it the club soda, just leave it in the fridge. Also, even though it says use sparkling jell-o, regular non-sparkling jello is fine. Ingredients 1-1/2 cups boiling water 2 (3 ounce) packages JELL-O Brand Sparkling Mandarin Orange Flavor Gelatin 2 cups cold club soda or seltzer 1 (11 ounce) can mandarin orange segments, drained 1 (8 ounce) can pineapple chunks, drained Instructions Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in cold club soda. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in orange segments and pineapple gently. Spoon into 6-cup mold. Refrigerate 4 hours or until firm. Unmold. Garnish as desired. Store leftover gelatin mold in refrigerator. site:http://homecooking.about.com/library/archive/bldes159.htm

If you make it with ginger ale or champagne it will not only sparkle, it will "fizz" in your mouth when you eat it. A word of warning, though: the "fizz" only lasts one day. The next day it will still be pretty and taste good, the fizz just goes flat.
