Does Buddhism have a single or group of documents that is essential to the understanding of the religion? (Like Christianity has the Old & New Testaments)

The main canon of Buddhism can be found in the Tipitaka. Within the Tipitaka is: The Vinaya Pitaka which is basically the code of ethics. The Sutra Pitaka is full of acts of buddha's teachings. and the third is the Abhidharma Pitaka, which I cannot recall exactly what it referred to at the moment. there are other texts as well, but I cannot remember them off hand.

No it doesn't. There are hundreds of different Suttas or Sutras (texts) but none is the core of Buddhism in the way that the Bible is of Christianity.
