Jack Daniel's is called whiskey because unlike bourbon, it undergoes an active filtering process prior to being barrelled and aged. This filtering step is known as the "Lincoln County Process." The whiskey is filtered through a column of charcoal chips made of sugar maple wood, soaked with Jack Daniel's, then charred. "Sour Mash" refers to the fact that each new batch of whiskey is made using some of the previous batch's "Feed Mash" (previously fermented mash that has been separated from its alcohol.) It is called sour mash because of the similar process used in making sourdough bread.

I was of the understanding thjat in order to be called a bourbon the whiskey has to be distilled in kentucky or tennesse and be aged in virgin casks.jack is aged in used sherry casks and the casks may be used more than once.

Bourbon is made only in kentucky, I'm sure there are other reasons as well but Jack Daniel's is made in Tennessee

Jack Daniels meets all of the requirements for being classified Bourbon. The difference is that Tennessee whiskies{Jack and Dickle] are filtered through at least 10 ft. of sugar maple charcoal,before it is barreled for aging.Although most Bourbon comes from Kentucky-none from Bourbon Co.-the only requirement for place is that it must be distilled, aged and bottled in the US.I suppose that JD could be Marketed as Bourbon if they wanted to. Incidentally all Bourbons and Tennessee whiskies utilize the sour mash technique today it is just so common that many distillers don't bother to put that on the label.

Also, Jack Daniels does need meet the legal definition of Bourbon which requires 51-79% corn, Jack is 80%...see Title 27 Code of Federal Regulations.

Bourbons are also sour mash whiskeys (remnants of the previous mash are used in the new mash to balance pH levels). But Jack Daniel's is filtered through maple charcoal before being put in barrels, and bourbon is not. And, no, bourbon does not have to be made in Kentucky. It doesn't even have to be made in Kentucky to be a "Kentucky bourbon" on the label, but it does have to be stored in Kentucky for at least a year in that case.
