Traditional Italian gamut gets run: oregano, basil, sage, thyme, rosemary and bay. I like to add pepper, turmeric, coriander, papprica and chili.

Do you mean after or before it is cooked? Because I like to add the hot peppers to it after, and I always use basil, oregano, thyme and garlic, if I make my own sauce.

I make my own sauce, I use garlic, oregano, garlic, basil and garlic. After it's baked, I like to add a shaking of chipotle powder!
