Two of my favorites came from my favorite Free halloween pumpkin carving templates at eHow, where you can choose from about 30 printable stencils. Tape them on your pumpkin, trace the pattern into the surface with a pen or pencil, then cut it out. The cool part is just carving off the surface in some areas where the light will pass through thinner areas so you can do shading if you are very good with a knife or a dremel. -
