  • My grandmother is 100% German, hence her recipe has got to qualify under your pretenses for potato salad types. Boiled potatoes, preferably red (make sure taters are cubed) mayonnaise (nothing with miracle in it's name) Yellow mustard boiled egg, cubed salt, ground pepper, finely chopped onions Sage, bay and some fresh parsley. Mix, chill, serve, yum :)
  • You will LOVE this!!! It's wonderful. Be sure to use good bacon and not fatty bacon. German Potato Salad 3 pounds new potatoes 1 yellow onion, quartered 1/2 pound bacon, diced 1 large red onion, diced 3/4 cup cider vinegar 1 tablespoon mustard seeds 1/4 cup canola oil Salt and freshly ground pepper 8 green onions, thinly sliced 1/4 cup chopped fresh parsley leaves Cook potatoes in a large pot with the onion and cover starting with cold water. Should take about 20-25 minutes, until the point of a knife enters easily. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm. Keeping them warm is important. They must be warm when you dress them. Fry up the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the onions to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and mustard seeds and cook for 2 more minutes. Whisk in the canola oil and season, to taste, with salt and pepper. Add the hot dressing to the potatoes and toss gently to coat. Fold in the green onions and parsley. Season again with salt and pepper, to taste.
  • Dice 1 small German into 1 cm. cubes. Dice 40 pounds baked potatoes into 1 cm. cubes and mash 20 pounds of the cubes. Combine diced German and potatoes with 20 pounds of mixed mayonaise, mustard (to taste), pickle relish, chopped pimento, diced or chopped onion, and a liter of lemon juice. mix thoroughly. Serves 200.

  • Boil in their jackets, peel and slice4 large potatoes Dice 5 thick slices of bacon 1 Cup chopped onion Mix dressing ingredients in measuring cup: 1/4 Cup wine vinegar 1/4 Cup water 1/4 Cup sugar To taste salt and pepper Fry the diced bacon in a large skillet over medium heat, stirring often, until almost crisp. Add chopped onion and continue stirring until onion is cooked and turns slightly golden brown. Add mixed dressing ingredients, heat and stir until mixture boils and sugar is dissolved. Add sliced potatoes, mixing everything together well. Season with salt and pepper.Continue cooking, stirring frequently, for at least 10 minutes, or until the potatoes have absorbed all the liquid and are heated through. Continue heating and turning the mixture over for another 5 to 10 minutes. May allow to stand for additional 10-15 minutes to let the flavors blend completely.
