One has more cream in it then the other. So it will have a smoother creamer tast to it.

"Premium" Ice Cream typically has a higher fat content (due to more cream) than standard ice cream. It may also be made with higher-quality ingredients (e.g. real vanilla instead of artificial vanilla flavoring). Most people find that the "Premium" ice cream tastes better than non-premium. I'm sure that varies by manufacturer, but I would presume that a "Premium" anything, if more than just a labeling device for the purpose of marketing, would contain higher quality ingredients (e.g. more cream, less carageenan or other emulsifiers) and therefore taste better. I'm genuninely surprised by this question... coming from you. Do you not eat a lot of ice cream? I'm not trying to be sarcastic and I'm not being judgemental at all, but the differences in quality between various brands of ice cream is so obvious to me that if you weren't john pennington, Level 57 Sage, I'd think you were just asking questions for the sake of asking them. However, I'm very happy for you that you have discovered that some ice creams are better than others, because ice cream is one of the nicest little pleasures in life, and contrary to what some people might say (as also applied to pizza and sex) there IS such a thing as bad ice cream.

Basically, the amount of cream. Cheap ice cream is basically margarine (hydrogenated vegetable fats) and sugar, plus synthetic fruit-like flavours. . As it gets better, they add skimmed milk fats and a bit of fruit puree. Then for fairly good stuff, they start adding real cream and real fruit. The best, of course, is only cream, sugar, and whatever fruit or whatever the flavour is. But the best is going to cost at least ten times as much as the cheapest. I never, ever touch cheap ice cream; I will only consider the "fairly good" or the best.

i saw this on the food ch. it depends on how much air is in the mixture while being churned and how fast its frozen afterwards if allowed to melt in the process it changes the structure giving you a different taste
