First, the goal should be realistic (so, for someone who loves change, the goal must be realistic given that fact). Second, change (the abililty to adapt and overcome obstacles) is essential in accomplishing a long term goal. You never know what is in store for you and you have to be able to roll with the punches in order to stay on track. The path to the goal is seldom a straight road.

Some goals can't be met unless you do change. But many other goals can be met in spite of change.

Make your underlying goal be "To continually change goals". At least you'll acheive one. Another more serious remark: Be clear to yourself what you truly want out of the goal(s), and more importantly, what are the little milestones on the way that contribute to making it. This way, you wont feel as bad about changing to a different path, because it will be more obvious that it wasnt a complete waste 'not reaching the end'.
