Why when you can't sleep, people ask you to count sheep? what sheep has to do with sleeping? why not count dragons or dolphins.

Dragons would scare you and give you nightmares. Dolphins live in the water so unless you want to wake up all wet ;) sheep are nice and soft cottony like your pillow or duvet.

Because counting sheep (which all look the same and don't do anything much) is boring and therefore won't stimulate your brain.
