It shouldn't really matter. "Kosher" slaughterhouses usually don't follow procedures anyway.

It just means that they aren't going to cut non kosher meat first and then slap the kosher stuff on right behind it. It's for people who actually take that part of their religion seriously. It's very hard to adhere to such strict rules in the real world and so it is a blessing for many Jews.

Basically it means that there is a special slicer used when cutting kosher meats that is not used for cutting any other meat. If the slicer touches non-kosher meat it will need to be cleaned in a very specific and special way before it is considered kosher again (which can be prohibitively expensive in both time and money). Employees need to be trained to ensure that they keep this slicer free of non-kosher meats or any dairy.
