You better hurry up and use it fast cause once opened, that stuff will turn to putrid slime quicker than Lindsay Lohan will wreck a car in a drunken stupor. Toast a bagel and use it instead of cream cheese, yummy.

My lazy solution for left over ricotta is to add some sweetener, a dash of vanilla, and pumpkin pie spice.

I have a simple two-step solution. Step One: Grab Spoon Step Two: Use Spoon to eat Ricotta. Mmm... yummy cheesy goodness....

Make some Manicotti, just by the pasta, get some Mozzarella and some Parmesan cheese (everyone has a cylinder of that in their fridge usually) and some pasta sauce with a few herbs and that Ricotta cheese will find a delicious new home.

I like to take ricotta and add some shredded parmesean, garlic powder, and feta cheese. Then I spoon it on some wheat crackers and toast it in the oven. Yum!
