Just Curious: What do you think it means if a person talks to other people in a platonic sort of way but on the rare occasion they talk to you it's a joke/humorous thing or they offer to help you w/ something.

I think they like you but are shy and don't feel comfortable enough around you to talk about things they don't have memorized.

I think it means the person is probably being friendly. I looked up ''platonic love'' so I had a hardened definition of it to refer to, and Wikipedia came up with: ''Platonic love in its modern popular sense is a non-sexual affectionate relationship, especially in cases where one might easily assume otherwise'' I think the ''where one might easily assume otherwise'' is especially significant. It's easy to read the wrong signals into things, and friends do make jokes and offer to help you with stuff, it doesn't necessarily mean they mean anything deeper by it.
