Any suggestions on how to make food cooked on a gas grill taste close to charcoal grilled? Is there something I can add to the gas grill bricks or do I add something to the food?

The easiest way is to just use a charcoal grill. Anything else will still taste fake.

No... but I used to have a gas grill... and one way to make the food yummy is to get hickory chips, soak them for a few hours in water, wrap them in a tinfoil with the ends open and a few holes poked in the top, and put that on the lavarocks. It takes a few minutes to get ready, but it'll give the meat a nice smoky taste.

Check Webbers site, there is hickory Coles that you can get for a normal Webber BBQ, I am sure they have invented something similar for a gas grill!!!
