Now that the conneciton has been made from vcr to tv how do I use the remote to program the vcr to actually record from the tv?

All VCR's are different. Is there a manual for yours? Because that would likely tell you how to operate it.

in the setup I described the tv should be set to AV or VIDEO and you use the VCR as the "tuner" to change channels.. in that set up the vcr will record whatever you are watching... if you want to record a show, and watch another the vcr will record the channel it is set to, then change the TV channels to watch something else
