Assuming you mean many centuries into the future when we managed to make them all extinct, I would say that they would think ancient man of the 21st decade had a deep spiritual bond with animals that they adored and were compelled to deify them in an anthropomorphic way as exemplified in team mascots and other mutated varieties where the animal in some way or another is actively partaking in the sport in question somehow.

I think there would be more interesting theories about the beliefs of a "Santa clause " type of person, a belief that Most cultures have in some form. Think of the bible being replaced with " the night before Christmas" If you are Good this magical guy will bring you presents If you are bad you get ashes ( burned) He can see you all the time He has flying reindeer He has help from magical elves, (angels) yes that would be interesting.
