if you want it crispy.. prepare a cornstarch, put pepper and salt to taste.. then roll your chicken on it.. then deep fry. if you want the chicken juicy, Marinate it with lemon, pepper, salt, soy sauce and deep fry

For the juiciest, brine it a day ahead. Or else soak over night in buttermilk. Start your oil heating. Throw in one or two onions, sliced up in your oil. Let them get as burn as possible. They will stay there the whole time you are frying. WHen you are ready to fry, dredge the chicken in seasoned flour (add paprika, garlic powder, salt, pepper, oregano, dash cayenne) and then dip in egg wash, and back into the flour. Drop carefully into the hot 350° oil and fry till dark and golden. It may take 15-20 minutes depending on the part (breasts take shorter than dark meat thighs and drumsticks.

I bought an easy to use Frydaddy at Wal*Mart. All you do is plug it in, wait for it to come to a boil (I use peanut oil) and put the amount of wings that you want to cook. Wings will yake about 7 minutes, drumsticks about 9, I don't eat thighs so I don't know and I prefer breast meat to come deboned because it would take too long to cook it otherwise. If you use chunks, it should be about 5 minutes till they're done. they can also be breaded, dipped in egg first of course. This is more useful than me telling you how to do it on commercial equipment.
