Easy Jajangmyeon (Brown Sauce Noodles- Korean Style) 300 gr. Cooked Noodles (Thick in size and chewy) 1/2 cup Pork 1/2 of a whole Onion 1/4 cup Potatoes 3 tbs Zucchini 3 tbs Ja-jang sauce (available in all Korean grocery stores, or black bean paste in the asian aisle) 3 tbs Cooking oil 1 tbs Corn Starch 1/2 cup Water(or Broth) Ginger, black pepper, sesame oil 1. Cook the noodles in boiling water and rinse them off with cold water. 2. Cut the onions, zucchini and potatoes into pieces, approximately 1.4" in length. Also cut the pork in the same fashion. 3. Slowly stir the ja-jang sauce in cooking oil at a simmer. (The cooking oil should shrink the ja-jang sauce in half in content.) 4. Mix the corn starch with water. (1 Tbs of corn starch to 2 Tbs of water is fine). 5. Cover the frying pan with oil and cook the pork with chopped ginger until the pork is completely cooked. Then add in the chopped vegetables and stir-fry some more. Then add one cup of water and let it come to a boil. Add in the corn starch/water mix and let it come to a boil. 6. Place noodles on a bowl and pour the ja-jang sauce over the noodles.

Noodles for 2 people Pork 100g Pork Marinating Sauce- Refined rice wine - 1 tsp Salt 2 sprinkles Pepper 2 sprinkles Ginger 2 sprinkles 1 onion 1 medium size potato 1/4 a zucchini 1/4 a carrot 3 leaves from 1/3 size cabbage (1 leaf from one cabbage) Black bean paste - 3 tbsp Olive oil - 2 tbsp Sugar - 2 tbsp (You can reduce it, it was a bit too sweet.) Cooking syrup - 1 tbsp Refined rice wine - 2 tbsp Water 2 cups Starch water (Mix of starch 2 tbsp +water 2 tbsp) Rinse the pork in cold water. Add the pork marinating sauce onto the pork. Mix them well. Cut the onion, potato, zucchini and carrot into small cubes. Cut the cabbage into medium size pieces. Pre heat the wok. Add some oil and the pork and stir fry it. Add the carrots and potatoes, stir it.Add the zucchinis, onions, and cabbages, stir it. 5. Pre heat the frying pan and add the olive oil and black bean paste. Stir no.5 on medium heat for 1 minute. Scoop out the black bean paste without the oil. Add it to the wok. Mix the vegetables with the black bean paste. Add the cooking syrup, sugar, and rice wine into the wok. Stir it. Add the water and boil it.Add the starch water into the wok. Stir it. (It is the final stage of making sauce.) Boil the water in a pot. Add the noodles when it starts to boil. Boil them for about 3 minutes. (You can start doing this at stage 10) Rinse them in cold water. Put them into a bowl. Add the jajang sauce on top of the noodles. You can serve it itself or decorate it with some cucumber slice, egg or green beans. In my case I used some radish sprouts and the egg.
