  • I love Moussakka with roasted vegetables and a hot crusty bread roll. Moussakka recipe :- Ingredients 4 or 5 aubergines, 4 or 5 potatoes (boiled and sliced), 1/2 kilo minced meat, 2 or 3 ripe tomatoes (or 1 tin chopped tomatoes), 1 teacup olive oil, 2 medium onions finely chopped, 1 bay leaf, 1 clove of garlic, a pinch of dried oregano, 1/2 teaspoon or one stick of cinnamon, 1/2 cup grated cheese, bechamel sauce, salt and pepper. Instructions Slice the aubergines and soak them in salted water for an hour to remove the bitter taste. Heat the oven to 180c. Heat the cup of oil in a large pan and saute the onions. Add the meat and cook for 10 minutes. Add the tomatoes, garlic, herbs, salt and pepper. (If using a cinnamon stick remove after cooking.) Cook for 1 hour. Drain the aubergines, coat them with flour and fry them in very hot oil. In a baking tray place a layer of potato slices, season, a layer of aubergine slices on top, season and finally a layer of meat sauce (drained of all excess liquid). Repeat until all the ingredients have been used. Make the bechamel sauce and pour over the moussaka. Sprinkle with cheese. Bake for approx 30 to 40 minutes until the bechamel is a light brown colour. Leave to cool for approx half an hour before serving, cut into squares and serve warm.
  • 15 oz. can pink kidney beans, rinsed 15 oz. can red kidney beans, rinsed 15 oz. can pork & beans unrinsed 1 large green pepper-chopped 1 large onion-chopped 1 chili pepper, minced 2 cups diced ham 1/2 lb. bacon - cooked, cooled and crumbled 3-5 cloved garlic, minced 1 cup brown sugar 1/2 cup BBQ sauce Combine all ingredients and mix well. Cook over medium heat until vegetables are soft. (several hours) I like to serve it with pigs in blankets.
  • my fiancee and i really love this one, and best of all its so easy: cut chicken breasts into strips and dip in beaten egg. toss in breadcrumbs that have been seasoned with salt and pepper, a few chives and parsley if liked. place on a baking sheet and pop in the fridge to chill for around 30 minutes. drizzle with a little olive oil and bake at 200 C for around 20 minutes until fully cooked. place on a wholemeal wrap with a little mayo and finely chopped salad and tomatoes. its really quick and tasty. hope you give it a go and enjoy.
  • BAKED 3 CHEESE TORTELLINI 1 1/2 sticks butter 1 c. Parmesan cheese 1/2 c. crumbled blue or Gorgonzola 1 c. Mozzarella cheese 2 tsp. polomar garlic 1 tbsp. fresh parsley 1 c. heavy cream 1/2 c. half and half 2 pkg. tortellini (I like Contadina) Salt and pepper to taste Boil tortellini; set aside. Melt butter in pan on low heat; add the cheeses, cream, garlic, and parsley. Pour over tortellini Don't boil the cheese mixture. Put in stove safe dish bake at 350 for 15 mins. Let cool for ten. Serve

  • A nice curry or stew in winter in a slow cooker. Just add veggies when I come home. Or in summer cooked salmon is a favourite for me with salad
