Why does ESPN show people playing poker, people running through obstacle courses, and people chopping wood, but they won't show the UEFA champions league, the FA cup, and other matches from the world's most popular sport?

It sounds as though the things you mention are cheap to buy licences to re-transmit. European football would be a major financial investment and, as European football isn't particularly popular with their viewers it wouldn't be money well-spent.
