If I were a Hannibal Lecter type, I would be a little punctilious about 'her' deadline, but I think I know what you're on about.
Expiry dates, 'use-by' dates and 'best before' dates are all marketing strategies that did not exist until I entered my 30's. Frozen meat might get a bit dry over time (ice can evaporate without going through the 'water' stage) but archaeological teams that found woolly mammoths in the Siberian Arctic tundra ate the meat without ill effects.
Canned foods keep practically forever, as long as the can has not been breached by rust or physical damage, as do things in glass jars.
The all-time classic, though, is table salt, and the stuff I bought last week has a use-by date of 2015. Good old sodium chloride, one of the most stable compounds known, has now got a definable useful life. It has been found in Egyptian tombs, unchanged from the time of the Pharaohs, in some cases 5,000years, and yet we are exhorted to chuck it out and get some new stuff after four or five years.
Is this for your benefit, or do you think someone is just trying to milk that extra buck or two out of you?

    Over and Out

No way. Why chance getting sick? That's especially true with foods that are extremely perishable .. like sausages.
