  • With their day jobs. Writing walkthroughs (assuming you're talking about the most common model where they're available for free, e.g. gamefaqs.com) is a hobby, not a career. It's a great example of someone going to quite a bit of trouble to help someone else out, just because he can. Some people really enjoy going through a game and figuring out all the little nuances and tricks and details, and publishing the information is showing off that ability. It is its own reward. If you're interested in writing walkthroughs and getting paid for it, you could look into publishing a printed walkthrough. I imagine the market has declined somewhat (because, as you say, people are willing to post the information for free), but it's still definitely there.
  • Walkthroughs are a labour of love and thanks to all the ones I've read over the years (even if I have completed the game without them.) It's great to see people invest so much time in something I enjoy and expect nothing back in return apart from the satisfaction of completion. In saying that good dedicated walkthroughs on their own website will often have advertising which can generate revenue. game faqs is brilliant for walkthrough advice. check it out.
