    Yeast is the leavening agent in bread dough. By absorbing sugars found naturally in the dough, yeast releases alcohol and carbon dioxide gases, which in turn causes the bread to rise by inflating it. The "bubbles" found in bread dough are evidence of those gas pockets caused by yeast.
