Help answer this question below.

In making cocktails why is the Angostura bitters poured down the side of the glass instead of being dropped into the drink like the other ingredients? You mix it in by stirring or shaking, anyway.

    It's only supposed to coat the sides of the glass , be swirled round with ice and then the excess thrown away. This is because it's both very strong, and pretty toxic in large amounts.
