Add two teaspoons of grated lemon peel and one teaspoon of sugar (the amount of sugar may be adjusted to taste). If a cocktail shaker is not available, use a sealable jar or enclosed container. Shake the ingredients vigorously to ensure that they are thoroughly mixed. The grated peel should begin to dissolve. Refrigerate the mixture overnight to allow the peel to continue disintegrating. The flavors will combine and mature. Re-shake the mixture before using it for cooking. Use the lemon peel juice as a direct substitute for fresh-squeezed lemon juice within recipes.
