    Professionally Researched. (What's this?)

Despite how it sounds, head cheese is not a cheese product. Head cheese is actually a sausage---according to the NutriBase website's Fish, Poultry & Meat glossary---made out of calf or pig parts such as brains, tongues, feet, cheeks, hearts and snouts.
