Liquid fruit pectin comes in two types: with sugar and without sugar. The no-sugar added version requires that you add sugar when using. The fruit pectin bottle clearly states its type and recommended usage.
Ball is one of the best known manufactures of canning supplies, including fruit pectin. Kraft also makes liquid fruit pectin, under the names of SureJell and Certo.
If the bottle states no sugar needed, do not add sugar to the mixture. The extra sugar damages the integrity of the fruit pectin and prevents the product from firming up properly.
Liquid fruit pectin is made by boiling ripened fruit--complete with the skins, stems and seeds--with water. The mixture is then strained before it's bottled, so that the remaining pieces of fruit are eliminated.
Once you open the bottle, store it in the refrigerator and use the rest within seven days. If the bottle remains sealed, it will keep for several months in a cool, dry place.
