While not a direct hazard to humans, used vegetable oil is considered hazardous waste. That's because it's lighter than water and small amount of it can contaminate a large amount of water. Putting large amounts of vegetable oil down your drain could cause the drains to clog. But used vegetable oil can be recycled into biofuels.
