  • Despite the similarity in name, the sirloin tip is not the same as top sirloin. Whereas top sirloin is one of the most prized cuts of beef because it is tender and marbled with fat, the sirloin tip is from below the sirloin, just above the hip. Sirloin tip is much leaner and therefore can be dry and chewy if not marinated or kept moist during the cooking process.

    Preparing Sirloin Tip Roast

    There's more than one way to prepare a sirloin tip roast, depending on your taste preferences. In all cases, you should get the meat out of the fridge several hours before you're ready to cook so it can reach room temperature, which allows it to roast more evenly. When you're ready to begin preparation, preheat the oven to 350 degrees. While the oven is heating you can add flavor to your sirloin tip roast by rubbing on herbs and spices. Because you want to keep the meat moist, it's a good idea to use some kind of juice or oil as well. One possibility is to mix 2 tbsp. of olive oil, 2 tsp. of lemon juice, two cloves of crushed garlic and 3 tbsp.minced sage and rub this combination over the entire exterior of the roast. For a smoky flavor option, replace the lemon juice and sage with ½ tsp. each of salt, black pepper, thyme, oregano and cayenne pepper, and 1 ¼ tbsp. of paprika. Yet another option is to marinate the beef in red wine and beef broth.

    Roasting the Meat

    With the beef adequately seasoned, you can place it in the oven on a lined baking sheet for 20 minutes per pound. A slow-roast method that maximizes the beef's flavor has you lower the temperature to 200 degrees and roast for four to five hours until the inner temperature is at least 120 degrees. Remove the roast and cover in tin foil while the oven heats to 500 degrees. Uncover the roast and cook to a final internal temperature between 140 and 150 degrees for medium, 160 to 170 for well done.

    Before Serving

    However you choose to roast the sirloin tip, let the meat sit for 15 minutes before cutting. This retains the natural moisture in the meat and prevents it from drying out any further. Slice thinly and serve.
