I have this strong suspicion that if the house was covered in green slime, the lure of that junk drawer would still win out

Because men think differently than you do. To us organization of the inside of drawers and closets allows us to have a place to neatly put things away. Then we can clean up what is not contained. Men and women have very different skills and priorities because the organization of the human brain is remarkably different in many domains.

They like to do the little things because its easier & leave the more complicated stuff up to women. They know if they don't do a good job chances are you wont ask them again.

Compared to women, men tend to notice functional aspects more than "cleanliness". The improved efficiency of accessing stuff in a draw is just as important (or more so!) as how clean the outside of the draw is. The term "clean" can be subjective... It might help If you literally emphasise the intended instruction.. EG "Today we are going to remove dirt/dust from surfaces, and improve the general appearance of things".

I'm the house cleaner in my family for 1 reason. It's my girlfriend that has the MAJOR problem when she tries to clean by getting side tracked on rearranging not only the cabinets and drawers but the whole room and get's half way done them moves on to another room and so on.It ends up worse than before she started.

Order is logical and efficient.

Men are more inclined to organize and fix things. Women are more inclined to just complain and talk forever about how they feel about it.
