Covered pit with Red Oak charcoal! But remember,it needs to be covered with the leafs of a banana tree or it will get too dry.

The Christmas reindeer is best served as follows: 1. Shred the meat, one pound at a time, in a food processor (or if unavailable, in a blender.) 2. Place the shredded contents in a large bowl, if you cannot find a bowl large enough a plastic bag will suffice. 3. Add spices, this part is up to you, but i recommend: Oregano, Curry, A bay leaf, Cinnamon, and a pinch of both salt and pepper. 4. Stir the contents, (or shake, if in a plastic bag) 5. Place the contents in a flat cookie sheet. 6. Douse in barbecue sauce until thoroughly covered, and until the pan is filled. 7. Bake at a temperature of 400 degrees for 30 minutes, or until golden-brown. 8. Enjoy!
