  • olive oil is healthy but vegetable and peanut are the norm
  • I highly recommend extra virgin olive oil. Not only does it do a good job, but it's good FOR you too! : )
  • I think sunflower oil... Olive oil is great, but sometimes the flavour can be a little too strong for basic frying. Sometimes we want something neutral. Where's your avatar gone?!
  • if you really want to get down in the kitchen you need to fry with clarified butter. For the most part I use EVOO
  • Canola oil is great to fry with. It's healthy, economical and doesn't change the taste of the food you're cooking in it.

  • Depends on what you are going to fry, and depends of if there are any food allergies among those who will be eating. Sesame oil Peanut oil Canola oil Olive oil (I like cold pressed extra virgin) Corn oil ... all are good enough, but some things are a little better in one oil while other things are better in other oils ... for example, large portions of flesh from mammal, bird, or fish seem to be slightly better in olive oil, while small chopped chunks, ground meats, and tiny things like shrimp seem to be better in a lighter oil like sesame, while stir frying Chinese style veggies seem to be better in peanut oil ... and then you may consider what spices you will be adding and how well they will blend with different spices ... for example, HHHOT spicy Mexican or Thai fried foods seem to be better with corn oil, while battered chicken chunks with a sweet & sour sauce, or a pineapple sauce seem to be better in canola ...
