Turkey when mixed with beef (or veal) acts like tofu - very adaptable to whatever it is mixed with.
I use grnd turk and beef and veal (even amounts of all) to make a meat loaf that is a bit tastier and, not as fatty.
Only caveat: do not buy and leave sit in fridge. Either buy when you wish to use it, or freeze it and then use it quickly. Leftovers are OK - but the ground meat raw should not be mixed together and let sit uncooked.
Yes, I have mixed them. Some people could notice, some couldn't.
Is it okay to eat raw meats?
