In Germany I was a registered blood donor in a hospital and I also donated to the Red Cross, where donors could get orange juice and nice party sandwiches. It gives instant strength ( glucose ) and prevents fainting.

The Juice is to replace the blood volume and the cookie is to get you to sit there for a few min. while you drink the juice and it gets into your blood stream. Or if it has raisins in it that is a down payment to the loss of the Iron in the hemoglobin that you just gave up.

In addition to the previous answers, you are supposed to wait fifteen minutes after your blood donation before you leave. The juice and cookies (and chicken soup, in the case of where I regularly donate blood) are meant to tide you over for that fifteen-minute wait.
