Root Beer gets its' flavor from the roots of the Sassafrass tree &/or from the roots of the Sarsparilla Vine.

Root beer gets its flavor by boiling the sap out of the roots of a sassafrass tree to create a syrup. If the syrup is mixed hot with regular water, you get what is called sassafrass tea, but when mixed with carbonated water to the cold syrup, you get root beer. However, root beer does NOT come from the roots of the sasparyla vine. Sasparyla has a similar, but lighter flavor than that of the sassafrass root. The drink that comes from boiling the roots of this plant and adding carbonated water is simply called "sasparilly". Side note: The leaves of the sassafrass tree are dried and ground into a powder known to the Creole/Cajun as "Filé" (pronounced fee'-lay) and is used as a seasoning in gumbos.

Root beer used to be mainly sassafras. BUt in the last 100 years root beer commercially sold is mainly wintergreen.
