It's always been a matter of much humor for me as well.
However, there are several types of "vegetarians" out there...and people who are not vegetarian who simply choose to limit their dietary intake for whatever reason.
Some are absolute vegetarians...no animal flesh or animal products whatsoever, including such things as eggs, fish, and milk.
Some eat fish, but not other animal flesh.
My wife is not vegetarian...but in general does NOT eat red meat. Pork, chicken, fish, and such, yes, but not red meat.
To me, if it's animal flesh of any kind...it's meat.
(And tasty, too, in my opinion!)
I assume it has to do with the "no legs", "two legs" and "four legs".
Fish have Omega-3 Fatty Acids that are good for you.
Poultry is usually very lean
Meat usually has quite a bit of fat, but has more flavor.

my gosh that a whole 'nother can o'worms there! the red meat debate. the culinary world says red meat is any meat that's red (excluding pork but including ostrich). the usda and the fsis (food safety inspection service) say that any meat from a mammal is red meat (excluding ostrich but including pork).
