Have a 88 f250 and when downshifting to come to a stop the rpms shoot up becuase of being in a lower gear, but when I push in the clutch at the stop the truck stalls

I have a 78 MK1 Golf, and I replaced the engine but left the original gearbox in the car. Now, I have no first gear. I do have 3rd & 4th gear, and to obtain 2nd gear, I have to push down (like selecting reverse gear) and left / down. What is causing this?
