  • You can use 1 3/4 shredded or grated carrots. I've never heard of a carrot cake recipe that requires water or liquid. It sort of flies in the face of conventional cake-making technique. There should be more than enough water in the carrots themselves. If you're in doubt, just use two cups of shredded or grated carrots. Then you'll be sure to have about the same proportion of liquid as in the recipe you have.
