I think looking at these scriptural prohibitions, they were mostly put in place to avoid food poisoning. Cross-contamination between meat and dairy products is a prime cause of bacterial growth (it's why restaurant kitchens nowadays will have colour-coded preparation-boards for different types of food). I think the ban on pork and shellfish is for the same reason - because it would have been difficult to store and cook them safely in historical times. Nowadays we have hygenic kitchens, we have refrigerators, we have disinfectatnts. So the risk is far less, so the rules are just traditional ones now instead of genuine safety rules.
