I have read conflicting opinions on Thaumaturgy. What exactly is it, and what is it used for?

The Catholic church believes it is the ability of a saint to perform miracles in the name of Jesus Christ.

In medieval times, it was refering to the ability to perform magical powers, to produce a desired effect in the material world. In the 1500's it was adopted by Christians and understood to be the ability to work miracles in the name of Christ. But most keep the original reference point. Thaumaturgy is often used as a synonym for magic.
