In Ethnic Cooking, there is no category for British cooking! (also no category for american cooking!) Why is that?

Perhaps the ethnic cook books you're reading are generally English or American. Starting from that point, "ethnic" just means anything but "normal" English or American food. Perhaps if we found a (say) Italian ethnic cook book, it might indeed include a recipe for a bean and broccoli casserole, and a side note on bubble-and-squeak.

My wife is a Filipina and she is a great cook UK and American foods seem to be a combo of all the other coutries as we are so diversified~~actually British food kind of has a reputation of being bad and bland and American food is mainly hamburger, pizza and hot dogs, and then Italian (pizza) Hispanic~Tex Mex, fake Chinese cuisine, and a mixture of fast foods starting with KFC McDonalds and a 57 heinz variety of the same old same old knock offs

THe word ethnic in the contex we are talkng generally means a member of a national group living in a foreign country. Therefore in America or Britain ethnic food cannot be American or British.
