I always use lemon after eating to help do away with fish taste. I thought this was why it was for.

Aside from enhancing the natural flavor of the fish, lemon also lessens the sharp smell of fish. Aside from cooking with it, lemon can also be added to fish and other sea food before cooking, so when stored your whole fridge doesn't smell fishy.

When seafood is at its freshest best, it has a certain sweetness to it- it is balanced by the tartness of lemon. As seafood ages, it loses some of the sweetness and then the lemon adds vibrancy, perks up the flavor. When fish is truly fresh it doesn't even need lemon.
